  • Food Sustainability Philosophy
    Food Sustainability Philosophy

We believe good food should do good, too! That’s why our food philosophy is rooted in sustainability and responsible sourcing. Here’s how we put that into practice:

Dairy Done Right: All our milk and yogurt come from cows that are free of artificial growth hormones (rBGH/rBST).

Better for Birds (and You!): Our poultry is raised without the routine use of antibiotics important to human health—helping fight antibiotic resistance.

Sustainable Seafood: We follow the Monterey Bay Aquarium’s Seafood Watch guidelines, only serving seafood rated as a Best Choice or Good Alternative.

Cage-Free Commitment: All of our shell eggs are certified cage-free through Humane Farm Animal Care (HFAC).

Coffee with a Conscience: We serve coffee that meets certifications like Fair Trade, Rainforest Alliance, Organic, and more—supporting responsible, ethical farming.

Locally Sourced First: Whenever possible, we choose ingredients from farms within 250–400 miles to support local and regional family farms.

Every bite you take supports a better, more sustainable food system—and we think that’s pretty awesome.
  • Reducing Waste
    Reducing Waste

At our restaurants, we believe great food shouldn’t come with a side of waste! That’s why our talented chefs and dining team are on a mission to keep delicious meals on your plate—and out of the landfill.

We use a smart, chef-driven waste tracking tool that helps us spot where food waste happens and take action to stop it. Think of it as our secret recipe for sustainability!

CCL's goal? Cut food waste in half by 2030. With daily tracking and a team dedicated to doing better every day, we’re cooking up a cleaner, greener future—one meal at a time.
